Ingredients

  • Hot Honey:
    • 500ml honey
    • 2 tablespoons chili flakes
    • 1 teaspoon tabasco sauce
    • 2 tablespoons lemon juice
  • Toastie (makes 1):
    • 2 slices white sourdough
    • 50g Fromager dโ€™Affinois Bleu cheese, cut into thick strips
    • 1/2 pear, finely sliced
    • 50g prosciutto, shaved
    • 1 tablespoon hot honey
    • 2 tablespoons mayonnaise
    • 50g butter
    • 1 tablespoon olive oil

Instructions

  1. For the hot honey, combine honey, chili flakes, tabasco sauce, and lemon juice in a small pot. Cook over medium heat until the honey is bubbling and has a runny consistency. Store in a sterilized jar for several months.
  2. To make the toastie, spread 1 tablespoon of mayonnaise on one slice of sourdough. Flip it over and layer with Dijon mustard, Fromager dโ€™Affinois Bleu cheese, pear slices, prosciutto, and a drizzle of hot honey. Top with the second slice of bread and spread the remaining mayonnaise over it.
  3. In a cast iron pan, melt the butter with olive oil over low heat. Once the butter is slightly foaming, place the toastie in the pan and cook on low heat for 10 minutes per side or until golden and crispy. Serve immediately.

  • This recipe makes a single serving, but you can double or triple the ingredients for more toasties.
