Description

This Tortilla Egg Bake is a quick and hearty breakfast or brunch dish. Layers of eggs, cheese, ham, and fresh vegetables baked inside a flour tortilla make it flavorful and satisfying.


Ingredients

  • 1 large flour tortilla
  • 3 eggs
  • 1/4 cup cottage cheese
  • Salt & pepper, to taste
  • 1/2 cup shredded cheese
  • 1 cup diced ham
  • 1/2 cup tomatoes, diced
  • 1/4 cup feta cheese
  • 1/4 cup green onions, chopped

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a small baking dish.
  2. In a bowl, whisk together the eggs, cottage cheese, salt, and pepper until smooth.
  3. Place the flour tortilla in the baking dish, gently pressing it to fit.
  4. Layer the shredded cheese, diced ham, tomatoes, feta cheese, and green onions evenly over the tortilla.
  5. Pour the egg mixture over the layered ingredients.
  6. Bake for 20–25 minutes, or until the eggs are set and the top is lightly golden.
  7. Remove from the oven, let cool slightly, slice, and serve warm.

Notes

  • Feel free to substitute the ham with cooked bacon or sausage for variety.
