- 3 eggs
- 1/4 cup cottage cheese
- Salt & pepper, to taste
- 1/2 cup shredded cheese
- 1 cup diced ham
- 1/2 cup tomatoes, diced
- 1/4 cup feta cheese
- 1/4 cup green onions, chopped
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a small baking dish.
- In a bowl, whisk together the eggs, cottage cheese, salt, and pepper until smooth.
- Place the flour tortilla in the baking dish, gently pressing it to fit.
- Layer the shredded cheese, diced ham, tomatoes, feta cheese, and green onions evenly over the tortilla.
- Pour the egg mixture over the layered ingredients.
- Bake for 20–25 minutes, or until the eggs are set and the top is lightly golden.
- Remove from the oven, let cool slightly, slice, and serve warm.

- Feel free to substitute the ham with cooked bacon or sausage for variety.
