Description

This Italian Tortellini Pasta Salad is a flavor-packed side dish perfect for any occasion! Tender cheese tortellini is tossed with a zesty homemade dressing, fresh veggies, mozzarella, and salami, making it an irresistible crowd-pleaser. Ideal for potlucks, BBQs, or meal prep!


Ingredients

  • 17โ€“20 ounces cheese tortellini (1 large package)
  • 1/3 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 clove garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 16 ounces grape tomatoes, halved (2 pints)
  • 8 ounces fresh mozzarella pearls (1 package)
  • 1 cup chopped salami or summer sausage
  • 1 yellow bell pepper, chopped
  • 1/2 cup sliced pepperoncini peppers
  • 1/4 cup red onion, finely chopped
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil

Instructions

  • Cook the tortellini according to the package directions. Drain and let it cool in the refrigerator.
  • Prepare the dressing: In a large bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, garlic, salt, and pepper.
  • Add the grape tomatoes, mozzarella, salami, bell pepper, pepperoncini, red onion, parsley, and basil to the bowl. Toss well to coat with the dressing.
  • Once the tortellini is cool, add it to the salad and toss again until evenly mixed.
  • Serve immediately or refrigerate for at least 30 minutes for best flavor.

Notes

  • For a vegetarian version, omit the salami or substitute with chickpeas.
  • Can be made a day aheadโ€”just give it a toss before serving!
  • Swap red wine vinegar for balsamic for a slightly sweeter dressing.
