Ingredients

  • 2 slices whole wheat bread

  • 1/2 cup shredded part-skim mozzarella

  • 1 roma tomato, thinly sliced

  • 1 thin slice of red onion

  • 8 fresh basil leaves

  • Pinch of kosher or sea salt

  • 1/8 teaspoon black pepper

  • 1 tablespoon extra-virgin olive oil


Instructions

  • Preheat a skillet over medium-high heat or use a panini press.

  • Brush olive oil on both slices of bread using a pastry or basting brush. Sprinkle each slice with salt and pepper.

  • Place one slice of bread, oil-side down. Layer basil leaves, tomato slices, red onion, and mozzarella cheese on top.

  • Top with the other slice of bread, oil-side up.

  • If using a skillet, press down with a lid to flatten the sandwich slightly. Cook for about 2 minutes, until golden brown on the bottom, then flip and repeat on the other side.
