Description

These Tomato and Cream Cheese Sandwiches are light, refreshing, and perfect for afternoon tea or a quick snack. Made with herb-infused cream cheese, Greek yogurt, and fresh tomatoes, these healthy finger sandwiches are both simple and delicious. Great for party appetizers, brunch, or picnic recipes! Ingredients

(Makes 6 finger sandwiches)

  • 100g (3.5oz) low-fat cream cheese, at room temperature

  • 2 tbsp low-fat plain natural Greek yogurt

  • 2 tbsp fresh chopped dill

  • 2 tbsp fresh chopped chives

  • 1 tsp freshly ground black pepper

  • 4 slices wholemeal bread

  • 8 thin slices of tomato


Instructions

  • Prepare the Cream Cheese Mixture:

    • In a bowl, mix cream cheese, Greek yogurt, dill, chives, and black pepper until smooth.

  • Assemble the Sandwiches:

    • Spread the cheese mixture evenly onto all four slices of bread, leaving a small border.

    • Place four tomato slices on two slices of bread.

    • Top with the remaining bread slices to form sandwiches.

  • Cut into Finger Sandwiches:

    • Using a serrated knife, trim off the crusts carefully.

    • Slice each sandwich into three equal fingers (or small rectangles).

  • Serving & Storing:

    • Arrange the sandwiches on a plate and serve immediately.

    • If making in advance, cover with cling film and a damp towel, refrigerate, and cut before serving.

  • For an elegant party platter, use assorted breads (white, wholemeal, seeded).
