Description

These Tofu and Chestnut Sausage Rolls are a vegan-friendly twist on the classic holiday favorite. Made with tofu, roasted chestnuts, and festive cranberry sauce, theyโ€™re crispy, flavorful, and freezer-friendly perfect for Christmas or any gathering!


Ingredients

  • 300g firm tofu (drained and crumbled, e.g., Cauldron brand)
  • 1 red onion (finely diced)
  • 180g roasted chestnuts (roughly chopped)
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 2 tbsp tamari
  • 1 tbsp red onion chutney
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 tbsp cranberry sauce
  • 1 sheet puff pastry
  • 1 tsp olive oil (for frying)
  • 1 tbsp sesame seeds (for topping, optional)

Instructions

  • Prepare the filling:

    • In a pan, heat 1 tsp olive oil over medium heat.
    • Add red onion and sautรฉ for 5 minutes until soft.
    • Stir in chestnuts, rosemary, thyme, sage, tofu (crumbled), tamari, and chutney.
    • Cook for another 5 minutes, stirring occasionally, until the tofu is slightly browned.
    • Season with salt and black pepper, then remove from heat and let cool.
  • Assemble the sausage rolls:

    • Preheat oven to 200ยฐC (fan).
    • Roll out puff pastry on a lined baking sheet and cut in half (shortest side).
    • Spread a line of cranberry sauce down one side of each pastry strip.
    • Evenly distribute the tofu-chestnut filling on top of the cranberry sauce.
    • Fold the pastry over the filling and press the edges with a fork to seal.
  • Bake the rolls:

    • Brush with tamari for a golden finish.
    • Cut each long roll into 6-7 smaller pieces.
    • Sprinkle with sesame seeds if using.
    • Bake for 22-25 minutes or until golden and crispy.
  • Serve and enjoy!

    • Let cool slightly before serving. Enjoy warm with extra cranberry sauce or chutney!

  • Make Ahead: You can prepare the filling a day in advance and store it in the fridge.
  • Freezer-Friendly: Freeze unbaked rolls, then bake straight from frozen, adding an extra 5 minutes to the baking time.
