Description
Indulgent tiramisu inspired French toast soaked in coffee custard, topped with fluffy mascarpone cream and served with a silky coffee anglaise sauce.

- 4 thick slices brioche bread, slightly stale
- 3 large eggs
- 1 cup whole milk
- 1/2 cup strong brewed coffee, cooled
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter
- 1 cup mascarpone cheese, softened
- 2 tablespoons powdered sugar
- 1/2 cup heavy cream
- 1 tablespoon cocoa powder
- 3 egg yolks
- 1 cup whole milk for anglaise
- 2 tablespoons granulated sugar for anglaise
- 1/4 cup strong brewed coffee for anglaise
Instructions
- Heat a large skillet over medium heat.
- In a mixing bowl, whisk together eggs, 1 cup whole milk, ½ cup brewed coffee, 2 tablespoons granulated sugar, and vanilla extract until smooth.
- Melt unsalted butter in the skillet, coating the surface evenly.
- Dip brioche slices into the custard mixture, allowing them to soak thoroughly without falling apart.
- Place soaked bread into the skillet and cook for 3 to 4 minutes per side until golden brown and slightly crisp.
- In a bowl, beat mascarpone cheese with powdered sugar until smooth. In a separate bowl, whip heavy cream to soft peaks, then gently fold into mascarpone mixture.
- For the coffee anglaise, heat 1 cup milk with ¼ cup brewed coffee in a saucepan until warm but not boiling. In another bowl whisk egg yolks with 2 tablespoons sugar. Slowly pour warm milk mixture into yolks while whisking, then return to saucepan and cook gently over low heat, stirring constantly until the sauce thickens enough to coat the back of a spoon. Do not boil.
- Spoon coffee anglaise onto plates, place French toast on top, pipe or spoon mascarpone cream over each slice, and dust evenly with cocoa powder before serving.
Notes
- Use slightly stale bread for best absorption and texture.
- Keep heat moderate to prevent burning the custard exterior.
- Strain the anglaise if needed for an ultra smooth finish.
