- 1 cup neutral oil such as sunflower or vegetable oil (240 milliliters)
- 3 tablespoons fresh lemon juice (45 milliliters)
- 1 teaspoon salt (5 grams)
Instructions
- Add garlic cloves and salt to a food processor. Blend until very finely minced and smooth.
- With the processor running, slowly drizzle in a small amount of oil until the mixture begins to emulsify and thicken.
- Alternate adding small amounts of oil and lemon juice while blending continuously.
- Continue this slow process until all oil and lemon juice are fully incorporated and the sauce becomes thick, white, and fluffy.
- Scrape down the sides as needed to ensure even blending.
- Taste and adjust salt or lemon juice if necessary.
- Transfer to a clean jar or bowl and refrigerate before serving for best texture.
Notes
- Add the oil very slowly to prevent the sauce from separating.
- If the sauce breaks, blend in 1 teaspoon of cold water to help re-emulsify.
