Description

A bold and creamy Middle Eastern garlic sauce made with fresh garlic, lemon juice, and slowly emulsified oil, whipped into a smooth, fluffy texture that pairs perfectly with grilled meats, wraps, and vegetables.


Ingredients

  • 6 large garlic cloves (about 30 grams)
  • 1 cup neutral oil such as sunflower or vegetable oil (240 milliliters)
  • 3 tablespoons fresh lemon juice (45 milliliters)
  • 1 teaspoon salt (5 grams)

Instructions

  1. Add garlic cloves and salt to a food processor. Blend until very finely minced and smooth.
  2. With the processor running, slowly drizzle in a small amount of oil until the mixture begins to emulsify and thicken.
  3. Alternate adding small amounts of oil and lemon juice while blending continuously.
  4. Continue this slow process until all oil and lemon juice are fully incorporated and the sauce becomes thick, white, and fluffy.
  5. Scrape down the sides as needed to ensure even blending.
  6. Taste and adjust salt or lemon juice if necessary.
  7. Transfer to a clean jar or bowl and refrigerate before serving for best texture.

Notes

  • Add the oil very slowly to prevent the sauce from separating.
  • If the sauce breaks, blend in 1 teaspoon of cold water to help re-emulsify.
  • Use fresh, firm garlic cloves for the best flavor and smoother texture.
