- 6 Burrito Sized Tortillas
- 1 Tablespoon Olive Oil
- 15.5 oz Canned Black Beans
- 1/2 cup Onions, Finely Chopped
- 2 Tablespoons Garlic, Minced
- 1 Jalapeรฑo, Deseeded
- 1 Roma Tomato, Finely Chopped
- 1 Tablespoon Taco Seasoning
- 1/2 Teaspoon Cayenne Pepper
- 1 Teaspoon Salt
- 1 cup Red and Green Peppers, Finely Chopped
- 1/2 cup Corn
- 8โ10 Mushrooms, Finely Chopped
- 1 cup Spinach, Roughly Chopped
- 1 cup Shredded Cheese
- 1/2 cup Sriracha Mayo
Instructions
- Heat olive oil in a large skillet over medium heat. Add onions, garlic, and jalapeรฑo; sautรฉ until softened.
- Add chopped mushrooms, red and green peppers, corn, and spinach. Cook until vegetables are tender.
- Stir in black beans, chopped tomato, taco seasoning, cayenne pepper, and salt. Cook for another 3-4 minutes until flavors meld.
- Remove the mixture from the skillet and set aside.
- Wipe the skillet clean and heat over medium-low. Place one tortilla in the skillet.
- Spread a layer of the veggie and bean mixture over half of the tortilla, then sprinkle with shredded cheese.
- Fold the tortilla over to cover the filling. Cook until the bottom is golden and crispy, about 2-3 minutes.
- Carefully flip the quesadilla and cook the other side until golden and cheese is melted.
- Repeat with remaining tortillas and filling.
- Slice quesadillas into wedges and serve with sriracha mayo on the side.
Notes
- Adjust cayenne pepper and jalapeรฑo to control heat level.
- Use any shredded cheese you prefer, like cheddar or Monterey Jack.
- For a vegan version, substitute cheese with vegan cheese and use vegan mayo.
