Description

This Easy Cauliflower Cheese is a simple, gluten-free side dish with creamy cheese and a touch of fresh parsley. Itโ€™s a perfect balance of flavor and comfort, made with minimal effort and clean-up.


Ingredients

  • 1 medium cauliflower โ€“ broken into small florets
  • 240 ml (1 cup) double (heavy) cream
  • 150 g (1 1/2 cups) mature/strong Cheddar cheese โ€“ grated (use vegetarian version if required)
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley โ€“ finely chopped

Instructions

  1. Preheat the oven to 200ยฐC/400ยฐF (fan).
  2. Bring a pan of water to the boil. Place the cauliflower florets in a steam basket or directly in the boiling water.
  3. Turn the heat down to a simmer and cook for 5 minutes, until the cauliflower is tender but not soggy. Drain well.
  4. Pour 2 tbsp of cream into a baking dish, then sprinkle 2 tbsp of grated cheese over the top.
  5. Add half of the cauliflower to the dish, followed by half of the remaining cream and a quarter of the cheese.
  6. Season with half of the salt and pepper.
  7. Top with the remaining cauliflower, then pour the remaining cream over the top. Sprinkle with the rest of the cheese, salt, and pepper.
  8. Bake in the oven for 15โ€“20 minutes, or until the cheese is golden and bubbly.
  9. Remove from the oven and sprinkle with fresh parsley before serving.

Notes

  • This dish is naturally gluten-free, making it a great option for those with dietary restrictions.
  • For an extra cheesy top, broil for 1โ€“2 minutes after baking to get a golden, crispy finish.
  • Feel free to use any cheese you prefer, but strong Cheddar gives the best flavor.
