Description
This Easy Cauliflower Cheese is a simple, gluten-free side dish with creamy cheese and a touch of fresh parsley. Itโs a perfect balance of flavor and comfort, made with minimal effort and clean-up.

- 1 medium cauliflower โ broken into small florets
- 240 ml (1 cup) double (heavy) cream
- 150 g (1 1/2 cups) mature/strong Cheddar cheese โ grated (use vegetarian version if required)
- 1/4 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh parsley โ finely chopped
Instructions
- Preheat the oven to 200ยฐC/400ยฐF (fan).
- Bring a pan of water to the boil. Place the cauliflower florets in a steam basket or directly in the boiling water.
- Turn the heat down to a simmer and cook for 5 minutes, until the cauliflower is tender but not soggy. Drain well.
- Pour 2 tbsp of cream into a baking dish, then sprinkle 2 tbsp of grated cheese over the top.
- Add half of the cauliflower to the dish, followed by half of the remaining cream and a quarter of the cheese.
- Season with half of the salt and pepper.
- Top with the remaining cauliflower, then pour the remaining cream over the top. Sprinkle with the rest of the cheese, salt, and pepper.
- Bake in the oven for 15โ20 minutes, or until the cheese is golden and bubbly.
- Remove from the oven and sprinkle with fresh parsley before serving.
Notes
- This dish is naturally gluten-free, making it a great option for those with dietary restrictions.
- For an extra cheesy top, broil for 1โ2 minutes after baking to get a golden, crispy finish.
- Feel free to use any cheese you prefer, but strong Cheddar gives the best flavor.
