Description

Thai Chicken Pizza combines a thin, crispy pizza crust with a creamy, flavorful peanut sauce, topped with shredded chicken, fresh vegetables, mozzarella, and cilantro for a fusion of Italian and Thai flavors.

  • 2-3 Tablespoons water
  • 1 heaping cup cooked, shredded chicken
  • 1/4 cup chopped red or green onion
  • 3 Tablespoons shredded carrot, moisture squeezed out
  • 1 1/4 cups freshly shredded mozzarella cheese
  • 1/4 cup fresh chopped cilantro

Instructions

  1. Preheat oven according to pizza dough instructions, usually 425°F (220°C).
  2. In a small bowl, whisk together peanut butter, rice vinegar, soy sauce, olive oil, crushed red pepper flakes, grated ginger, honey, sesame oil, and water until smooth to make the peanut sauce.
  3. Spread peanut sauce evenly over the rolled-out pizza dough.
  4. Evenly distribute shredded chicken over the sauce, then add chopped onion and shredded carrot.
  5. Sprinkle mozzarella cheese over the top.
  6. Bake according to dough instructions, typically 12–15 minutes, or until crust is golden and cheese is melted and bubbly.
  7. Remove from oven and sprinkle with fresh chopped cilantro before slicing and serving.

Notes

  • Squeeze excess moisture from shredded carrot to prevent a soggy pizza.
  • Adjust crushed red pepper flakes for desired spice level.
  • Use cooked chicken from rotisserie or leftover chicken for convenience.
