Description
Texas Roadhouse Smothered Chicken is a juicy, tender chicken breast topped with sautéed mushrooms and onions, smothered in melted Monterey Jack cheese, and served with a rich, flavorful sauce.

- 2 boneless, skinless chicken breasts
- 1/2 cup Italian dressing
- 1 tablespoon avocado oil or other neutral, high-heat oil
- 1 tablespoon butter
- 10 oz cremini mushrooms, sliced
- 1/2 cup yellow onion, sliced
- 2 tablespoons water
- 1/4 teaspoon white pepper
- 1/4 teaspoon black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 2 oz Monterey Jack cheese, sliced
Instructions
- Marinate the chicken breasts in Italian dressing for at least 30 minutes.
- Heat avocado oil in a skillet over medium heat. Add the marinated chicken breasts and cook for 6–7 minutes on each side, until the chicken is cooked through and golden brown. Remove from the skillet and set aside.
- In the same skillet, melt butter over medium heat. Add the sliced mushrooms and onions, and sauté for about 5 minutes until softened.
- Add water to the skillet and stir in white pepper, black pepper, onion powder, garlic powder, and salt. Continue cooking for another 2–3 minutes until the sauce slightly thickens.
- Return the chicken to the skillet, nestling it into the mushroom and onion mixture. Place a slice of Monterey Jack cheese on top of each chicken breast and cover the skillet. Let it cook for 2–3 minutes until the cheese is melted.
- Serve the smothered chicken hot, with the mushrooms, onions, and sauce spooned over the top.
Notes
- For added flavor, consider using a mix of mushrooms, such as cremini and shiitake.
- Serve with mashed potatoes, rice, or a side of steamed vegetables for a complete meal.
- If you prefer a spicier version, add some red pepper flakes or hot sauce to the sauce.
