- 2 pounds boneless skinless chicken breasts
- 2 teaspoons garlic, minced
- 2 teaspoons fresh ginger, minced
- 1/4 cup honey
- 1/4 cup brown sugar
- 1/2 cup low-sodium soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1/4 cup cold water
- 2 tablespoons cornstarch
- Optional sesame seeds and green onions, for garnish
Instructions
- Place the chicken breasts in the bottom of a slow cooker.
- In a small bowl, stir together garlic, ginger, honey, brown sugar, soy sauce, rice vinegar, and sesame oil. Pour the mixture over the chicken.
- Cook on high for 3-4 hours or on low for 6-7 hours, until the chicken is tender.
- Remove the chicken from the slow cooker and shred it using two forks.
- Pour the sauce from the slow cooker through a strainer into a saucepan. Bring the sauce to a simmer over medium heat.
- In a small bowl, mix cornstarch with cold water. Add this mixture to the saucepan and stir until the sauce thickens, about 2-3 minutes.
- Pour the sauce over the shredded chicken and toss to coat. Keep the mixture on the warm setting in the slow cooker if desired.
- Serve the chicken over rice and garnish with sesame seeds and chopped green onions.
Notes
- For extra flavor, try adding a pinch of red pepper flakes for a little heat.
- This dish can also be served with steamed vegetables or stir-fried veggies.
