Description

This Slow Cooker Teriyaki Chicken is a simple, sweet, and tangy dish made with tender chicken in a flavorful homemade teriyaki sauce. Perfect served over rice for an easy and satisfying dinner.


Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 2 teaspoons garlic, minced
  • 2 teaspoons fresh ginger, minced
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1/2 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1/4 cup cold water
  • 2 tablespoons cornstarch
  • Optional sesame seeds and green onions, for garnish

Instructions

  • Place the chicken breasts in the bottom of a slow cooker.
  • In a small bowl, stir together garlic, ginger, honey, brown sugar, soy sauce, rice vinegar, and sesame oil. Pour the mixture over the chicken.
  • Cook on high for 3-4 hours or on low for 6-7 hours, until the chicken is tender.
  • Remove the chicken from the slow cooker and shred it using two forks.
  • Pour the sauce from the slow cooker through a strainer into a saucepan. Bring the sauce to a simmer over medium heat.
  • In a small bowl, mix cornstarch with cold water. Add this mixture to the saucepan and stir until the sauce thickens, about 2-3 minutes.
  • Pour the sauce over the shredded chicken and toss to coat. Keep the mixture on the warm setting in the slow cooker if desired.
  • Serve the chicken over rice and garnish with sesame seeds and chopped green onions.

Notes

  • For extra flavor, try adding a pinch of red pepper flakes for a little heat.
  • This dish can also be served with steamed vegetables or stir-fried veggies.
  • Make sure to shred the chicken well for the best texture and flavor absorption.
