Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1 cup fresh pineapple chunks

  • 1/4 cup teriyaki sauce

  • 1 tbsp olive oil

  • 1 red bell pepper, sliced

  • 1 carrot, thinly sliced

  • 1 zucchini, sliced

  • 2 green onions, chopped

  • Salt and pepper, to taste

  • Aluminum foil for wrapping


Instructions

Prepare the Packets:

  1. Preheat your oven to 375ยฐF (190ยฐC) or heat a grill to medium-high.

  2. Cut 4 large pieces of aluminum foil (about 12 inches each).

  3. In a bowl, toss the chicken pieces with teriyaki sauce, olive oil, salt, and pepper.

  4. Divide the pineapple chunks, bell pepper, carrot, zucchini, and green onions evenly among the foil sheets.

  5. Add the seasoned chicken on top of the vegetables.

Seal and Cook:
6. Fold the foil over the ingredients and seal the edges tightly to form packets.
7. Place the packets on a baking sheet (for oven) or directly on the grill.
8. Bake for 25 minutes or grill for 15-20 minutes, until the chicken is fully cooked (internal temp 165ยฐF/75ยฐC).

9. Carefully open the packets (watch for steam!).
