For the Chai Sugar Cookies:
- 1/2 cup unsalted butter (1 stick), at room temperature
- 1/2 cup vegetable oil or refined coconut oil
- 1/2 cup granulated sugar or light brown sugar
- 1/2 cup powdered sugar
- 1 chai tea bag (contents only, bag discarded)
- 1 large egg, at room temperature
- 2 teaspoons pure vanilla extract
- 2 cups all-purpose flour (spooned and leveled)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Granulated sugar, for rolling
For the Cookie Glaze:
- 1 1/2 cups powdered sugar
- 1 pinch ground nutmeg
- 1 pinch ground cinnamon
- 3 tablespoons whole milk or eggnog
Instructions
- Make the cookie dough:
- In a mixing bowl, beat the butter on medium-low speed until smooth (about 1 minute).
- Add oil and mix on low speed until incorporated.
- Add both sugars and chai tea contents, then beat until combined.
- Mix in egg and vanilla until fully incorporated.
- Stir in flour, baking soda, and salt on low speed until just combined. Do not over-mix.
- Chill the dough:
- Cover the dough with plastic wrap and refrigerate for 1 hour.
- Bake the cookies:
- Preheat oven to 350ยฐF (175ยฐC).
- Line baking sheets with parchment paper and lightly grease.
- Roll dough into 1-tablespoon balls, coat in granulated sugar, and place on baking sheets.
- Bake for 10 minutes or until edges are set. Let cool on a wire rack.
- Make the glaze:
- Whisk powdered sugar, nutmeg, cinnamon, and milk/eggnog in a bowl until smooth.
- Glaze and serve:
- Drizzle or dip cookies in glaze, let set, then enjoy!
