Units Scale

For the Chai Sugar Cookies:

  • 1/2 cup unsalted butter (1 stick), at room temperature
  • 1/2 cup vegetable oil or refined coconut oil
  • 1/2 cup granulated sugar or light brown sugar
  • 1/2 cup powdered sugar
  • 1 chai tea bag (contents only, bag discarded)
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour (spooned and leveled)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Granulated sugar, for rolling

For the Cookie Glaze:

  • 1 1/2 cups powdered sugar
  • 1 pinch ground nutmeg
  • 1 pinch ground cinnamon
  • 3 tablespoons whole milk or eggnog

Instructions

  • Make the cookie dough:
    • In a mixing bowl, beat the butter on medium-low speed until smooth (about 1 minute).
    • Add oil and mix on low speed until incorporated.
    • Add both sugars and chai tea contents, then beat until combined.
    • Mix in egg and vanilla until fully incorporated.
    • Stir in flour, baking soda, and salt on low speed until just combined. Do not over-mix.
  • Chill the dough:
    • Cover the dough with plastic wrap and refrigerate for 1 hour.
  • Bake the cookies:
    • Preheat oven to 350ยฐF (175ยฐC).
    • Line baking sheets with parchment paper and lightly grease.
    • Roll dough into 1-tablespoon balls, coat in granulated sugar, and place on baking sheets.

  • Make the glaze:
    • Whisk powdered sugar, nutmeg, cinnamon, and milk/eggnog in a bowl until smooth.
  • Glaze and serve:
    • Drizzle or dip cookies in glaze, let set, then enjoy!
