Description

This Tavern-Style Sourdough Pizza features a thin, crispy crust with a perfect balance of tangy sourdough flavor and crunch. Made with a bubbly sourdough starter, itโ€™s ideal for crafting delicious, crispy pizza bases that hold up beautifully to any topping.


Ingredients

  • 350 grams water (preferably lukewarm)
  • 110 grams sourdough starter (active and bubbly)
  • 500 grams all-purpose or bread flour
  • 10 grams salt

Instructions

  1. In a large mixing bowl, combine the lukewarm water and sourdough starter. Stir until well combined.
  2. Add the flour and salt, mixing until a rough dough forms.
  3. Knead the dough on a lightly floured surface for 8-10 minutes, until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise at room temperature for 4-6 hours or until doubled in size.
  5. Once the dough has risen, preheat your oven to 500ยฐF (260ยฐC), placing a pizza stone or baking sheet inside to heat up.
  6. Divide the dough into two equal portions and roll each one out into a thin circle on a floured surface.
  7. Carefully transfer the dough onto parchment paper or a pizza peel, then add your favorite toppings.
  8. Transfer the pizza to the preheated pizza stone or baking sheet and bake for 10-12 minutes, or until the crust is golden and crispy.
  9. Remove from the oven, slice, and serve immediately.

Notes

  • If you donโ€™t have a pizza stone, a preheated baking sheet will work well too.
  • For best results, make sure your sourdough starter is active and bubbly before using it in the dough.
  • You can make the dough ahead of time and refrigerate it for up to 24 hours for a more developed flavor.
