Description

The Tater Tot Breakfast Bowl with Sausage Gravy is the ultimate comfort food morning meal—crispy tater tots piled high with fluffy scrambled eggs, savory sausage gravy, and melty cheddar cheese. Hearty, indulgent, and perfect for weekends or brunch.

Ingredients

Units Scale
  • 4 cups frozen tater tots
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp butter
  • 1/2 lb breakfast sausage
  • 2 tbsp all-purpose flour
  • 1 1/2 cups milk (for gravy)
  • 1/4 tsp crushed red pepper (optional)
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped green onions (for garnish)

Instructions

  1. Preheat oven and bake tater tots according to package directions until crispy.
  2. While tots bake, brown breakfast sausage in a skillet over medium heat until fully cooked. Do not drain.
  3. Sprinkle flour over sausage and stir for 1 minute to cook the flour.
  4. Slowly pour in milk while stirring, and cook until gravy thickens, about 3–5 minutes. Season with salt, pepper, and crushed red pepper if using.
  5. In a separate pan, whisk eggs with milk, salt, and pepper. Melt butter in a nonstick skillet over medium-low heat and scramble eggs until just set and fluffy.
  6. To assemble: Place a layer of crispy tater tots in bowls, top with scrambled eggs, ladle on sausage gravy, and sprinkle with shredded cheddar cheese.
  7. Garnish with chopped green onions and serve immediately.

Notes

  • Add hot sauce or sriracha for extra heat.
  • Swap sausage with turkey sausage or plant-based crumbles for a lighter option.
  • Cheddar can be replaced with pepper jack or mozzarella.
  • Gravy can be made ahead and reheated gently with added milk.
