Instructions
- In a large bowl, combine mayonnaise, Dijon mustard, lemon juice, tarragon, salt, and pepper.
- Add chicken, celery, and green onions. Stir until well coated.
- Adjust seasoning to taste and chill for at least 30 minutes to allow flavors to meld.
- Assemble sandwiches by layering chicken salad onto bread or croissants. Add lettuce if desired.
- Serve immediately or wrap tightly and refrigerate for later.
