Description

Tacos Gobernador are a flavorful Mexican delight made with sautéed shrimp, fresh vegetables, and a touch of spicy chipotle sauce. Paired with a creamy and zesty green salsa, these tacos are perfect for a special dinner or any taco night

Tacos:

  • 1 pound shrimp, peeled and deveined
  • 1 bell pepper, diced
  • 1 white onion, diced
  • 2 tomatoes, chopped
  • 1/2 cup chipotle sauce
  • Salt, to taste
  • Black pepper, to taste

Green Salsa:

  • 2 tomatillos, husked
  • 1 avocado
  • 3 serrano peppers
  • 1 garlic clove
  • Fresh cilantro, to taste
  • 1 teaspoon chicken bouillon powder (optional)
  • Juice of 1 lemon

Instructions

Tacos:

  1. Heat a skillet over medium heat. Add a small amount of oil and sauté the diced bell pepper, onion, and tomatoes until softened.
  2. Add the shrimp to the skillet and cook until pink and fully cooked, about 4–5 minutes.
  3. Stir in the chipotle sauce and season with salt and black pepper to taste. Cook for an additional 2 minutes, ensuring the shrimp is well coated.
  4. Remove from heat and set aside.

Green Salsa:

  1. Boil the tomatillos and serrano peppers in water for 5 minutes or until softened.
  2. Transfer the boiled tomatillos and peppers to a blender. Add the avocado, garlic, cilantro, chicken bouillon powder, and lemon juice.
  3. Blend until smooth and creamy. Adjust seasoning to taste.

To Assemble:

  1. Warm your favorite tortillas (corn or flour).
  2. Add a generous scoop of the shrimp mixture to each tortilla.
  3. Top with the green salsa and serve immediately.

Notes

  • For extra flavor, you can grill the shrimp instead of sautéing.
  • Add melted cheese to the tacos for an authentic Gobernador-style experience.
  • Adjust the spice level of the green salsa by using fewer serrano peppers.
