Tacos:
- 1 pound shrimp, peeled and deveined
- 1 bell pepper, diced
- 1 white onion, diced
- 2 tomatoes, chopped
- 1/2 cup chipotle sauce
- Salt, to taste
- Black pepper, to taste
Green Salsa:
- 2 tomatillos, husked
- 1 avocado
- 3 serrano peppers
- 1 garlic clove
- Fresh cilantro, to taste
- 1 teaspoon chicken bouillon powder (optional)
- Juice of 1 lemon
Instructions
Tacos:
- Heat a skillet over medium heat. Add a small amount of oil and sauté the diced bell pepper, onion, and tomatoes until softened.
- Add the shrimp to the skillet and cook until pink and fully cooked, about 4–5 minutes.
- Stir in the chipotle sauce and season with salt and black pepper to taste. Cook for an additional 2 minutes, ensuring the shrimp is well coated.
- Remove from heat and set aside.
Green Salsa:
- Boil the tomatillos and serrano peppers in water for 5 minutes or until softened.
- Transfer the boiled tomatillos and peppers to a blender. Add the avocado, garlic, cilantro, chicken bouillon powder, and lemon juice.
- Blend until smooth and creamy. Adjust seasoning to taste.
To Assemble:
- Warm your favorite tortillas (corn or flour).
- Add a generous scoop of the shrimp mixture to each tortilla.
- Top with the green salsa and serve immediately.
Notes
- For extra flavor, you can grill the shrimp instead of sautéing.
- Add melted cheese to the tacos for an authentic Gobernador-style experience.
- Adjust the spice level of the green salsa by using fewer serrano peppers.
