Description

These Tacos Al Pastor with Ground Turkey are a lighter, yet irresistibly flavorful take on the classic taco. With savory-sweet Al Pastor marinade, grilled pineapple, and all the taco fixings, they make the perfect meal for taco night any day of the week! Gluten-free and easily customizable.

For the Ground Turkey:

  • 1 lb 94% lean ground turkey (or ground beef/plant-based meat crumbles)
  • 1 tablespoon extra virgin olive oil
  • 2 garlic cloves, minced
  • 1 cup Al Pastor Marinade (from your recipe)
  • 1/2 cup organic chicken stock (or beef/vegetable stock)

For the Tacos:

  • 8 flour or corn tortillas (or homemade tortillas/hard taco shells)
  • 1 1/2 cups fresh pineapples, chopped into chunks (grilled or roasted for extra flavor)
  • Pico de Gallo (use your recipe)
  • Salsa verde
  • Chopped fresh cilantro
  • Guacamole (use your recipe)
  • Diced white onions

Instructions

  • Prepare the Al Pastor with Ground Turkey:
    • Make the Al Pastor Marinade according to your recipe.
    • In a medium skillet, heat olive oil over medium-high heat. Add minced garlic and sautรฉ until fragrant, about 1 minute.
    • Add ground turkey to the skillet and cook, breaking it up with a wooden spoon, until browned. If there is excess fat, wipe it off or drain it.
    • Stir in the Al Pastor marinade and chicken stock, bringing to a boil. Reduce the heat to medium-low and simmer, stirring occasionally, until the turkey is fully cooked and the liquid reduces slightly, about 15-20 minutes. Add more stock if needed to keep the meat moist.
  • Char or Warm the Tortillas:
    • Oven Method: Preheat oven to 350ยฐF (175ยฐC). Place tortillas directly on the rack and heat for 2 minutes. Turn off oven and remove tortillas.
    • Stovetop Method: Place tortillas on a gas burner over medium heat, turning them as they lightly char, about 30 seconds per side.
  • Assemble the Tacos:
    • Add a generous portion of the Al Pastor turkey to each charred tortilla.
    • Top with grilled pineapple chunks, diced white onions, fresh cilantro, salsa verde, Pico de Gallo, and guacamole.
    • Repeat until all tacos are assembled.
  • Serve: Serve immediately and enjoy your flavorful Tacos Al Pastor!

Notes

  • You can easily make these tacos gluten-free by using corn tortillas or gluten-free tortillas.
