- 1 lb lean ground beef
- 1 white onion, chopped
- 4 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp sea salt

- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp dried oregano
- 1 cup chunky salsa
- 1/2 cup water
- 4 sweet potatoes

- Shredded mozzarella
- Diced tomatoes
- Mashed avocado
- Sour cream
Instructions
- Poke holes in the sweet potatoes using a fork. Place them in a microwave-safe dish with some water. Microwave on high for 10 minutes. If not fully cooked, microwave for another 5 minutes. If your microwave is small, cook two at a time.
- While the sweet potatoes cook, heat a skillet over medium-high heat. Add the ground beef, chopped onion, and minced garlic. Cook for 5-7 minutes until browned, then drain excess grease.
- Stir in the chili powder, cumin, salt, black pepper, paprika, garlic powder, onion powder, red pepper flakes, and oregano. Add the salsa and water, then simmer for 5 minutes.
- Once the sweet potatoes are cooked, let them cool slightly. Cut them open lengthwise without slicing completely through.
- Stuff the potatoes with the seasoned beef mixture.
- Top with shredded mozzarella, diced tomatoes, mashed avocado, and sour cream. Serve warm and enjoy!
