  • 1 white onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp ground paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp dried oregano
  • 1 cup chunky salsa
  • 1/2 cup water
  • 4 sweet potatoes

Toppings:

  • Shredded mozzarella
  • Diced tomatoes
  • Mashed avocado
  • Sour cream

Instructions

  • Poke holes in the sweet potatoes using a fork. Place them in a microwave-safe dish with some water. Microwave on high for 10 minutes. If not fully cooked, microwave for another 5 minutes. If your microwave is small, cook two at a time.
  • While the sweet potatoes cook, heat a skillet over medium-high heat. Add the ground beef, chopped onion, and minced garlic. Cook for 5-7 minutes until browned, then drain excess grease.
  • Stir in the chili powder, cumin, salt, black pepper, paprika, garlic powder, onion powder, red pepper flakes, and oregano. Add the salsa and water, then simmer for 5 minutes.
  • Once the sweet potatoes are cooked, let them cool slightly. Cut them open lengthwise without slicing completely through.
  • Stuff the potatoes with the seasoned beef mixture.
  • Top with shredded mozzarella, diced tomatoes, mashed avocado, and sour cream. Serve warm and enjoy!
