Description

This Taco Soup is a hearty, flavorful, and easy meal that’s perfect for busy nights! Loaded with ground beef, Rotel tomatoes, cream cheese, and classic taco spices, it’s a comforting bowl of goodness. Top with cheddar cheese and sour cream for the ultimate finish.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 can Rotel tomatoes with chilies (10 oz)
  • 4 oz cream cheese
  • 1 1/2 cups chicken broth or stock
  • 1 tsp garlic powder
  • 1 packet taco seasoning

Instructions

  • In a large pot, brown the ground beef and chopped onion over medium heat. Drain any excess grease.
  • Reduce the heat to low, then add the cream cheese and stir until melted.
  • Add the Rotel tomatoes, chicken broth, garlic powder, and taco seasoning. Stir to combine.
