- 1 pound rotini pasta
- 1 pound lean ground beef
- 1 (28-ounce) can crushed tomatoes
- 3/4 cup salsa
- 1 (1-ounce) packet taco seasoning
- 2 teaspoons cumin
- 1 tablespoon chili powder
- 1/2 teaspoon cayenne pepper
- 1 (14-ounce) can whole kernel corn, drained
- 1 (14-ounce) can black beans, drained and rinsed
Instructions
- Cook rotini pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet or saucepan, cook ground beef over medium heat until browned. Drain excess fat.
- Add crushed tomatoes, salsa, taco seasoning, cumin, chili powder, and cayenne pepper. Stir to combine and simmer for 5–10 minutes.
- Stir in corn and black beans, cooking for an additional 2–3 minutes until heated through.
- Add cooked pasta to the sauce and toss to coat evenly.
- Serve hot, optionally topped with shredded cheese, sour cream, or chopped cilantro.
Notes
- Use whole wheat pasta for a healthier twist.
- Adjust cayenne pepper to taste for milder or spicier flavor.
- Can be made ahead and stored in the refrigerator for up to 3 days.
