Description

Taco Pasta is a hearty, flavorful one-pot dish combining rotini pasta with seasoned ground beef, black beans, corn, and a zesty tomato-salsa sauce, perfect for a quick and satisfying weeknight dinner.


Ingredients

  • 1 pound rotini pasta
  • 1 pound lean ground beef
  • 1 (28-ounce) can crushed tomatoes
  • 3/4 cup salsa
  • 1 (1-ounce) packet taco seasoning
  • 2 teaspoons cumin
  • 1 tablespoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1 (14-ounce) can whole kernel corn, drained
  • 1 (14-ounce) can black beans, drained and rinsed

Instructions

  1. Cook rotini pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet or saucepan, cook ground beef over medium heat until browned. Drain excess fat.
  3. Add crushed tomatoes, salsa, taco seasoning, cumin, chili powder, and cayenne pepper. Stir to combine and simmer for 5–10 minutes.
  4. Stir in corn and black beans, cooking for an additional 2–3 minutes until heated through.
  5. Add cooked pasta to the sauce and toss to coat evenly.
  6. Serve hot, optionally topped with shredded cheese, sour cream, or chopped cilantro.

Notes

  • Use whole wheat pasta for a healthier twist.
  • Adjust cayenne pepper to taste for milder or spicier flavor.
  • Can be made ahead and stored in the refrigerator for up to 3 days.
