  • 1 lb sweet potatoes, peeled and grated
  • 2 large green onions, thinly sliced
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • Neutral cooking oil, for frying
  • Flaky sea salt, for serving

Instructions

  • Make the Dill Yogurt Sauce:

    • In a bowl, mix Greek yogurt, dill, lemon zest, lemon juice, and granulated garlic.
    • Season with salt and black pepper to taste.
    • Let sit at room temperature while preparing the fritters.
  • Prepare the Fritters:

    • In a large bowl, whisk together eggs, smoked paprika, granulated garlic, cayenne, and salt.
    • Fold in grated sweet potatoes and green onions.
    • Sprinkle in flour and baking powder, then fold until combined.
  • Cook the Fritters:

    • Heat a 12โ€ skillet over medium heat and coat the bottom with oil.
    • Once hot, spoon about 2 tablespoons of the mixture into the skillet, flattening each fritter slightly.
