- 1 cup mashed sweet potato, smooth and cooled
- 1/2 cup applesauce
- 1 3/4 cups all purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup cocoa powder
- 1 1/2 cups powdered sugar
- 2 to 3 tablespoons milk, for frosting
Instructions
- Preheat oven to 350°F and grease a 9×5 inch loaf pan.
- In a large bowl, whisk together mashed sweet potato, applesauce, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
- In a separate bowl, combine all purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Pour the batter into the prepared loaf pan and smooth the top evenly.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool completely in the pan, then transfer to a rack.
- For the frosting, mix cocoa powder and powdered sugar with 2 to 3 tablespoons milk until smooth and spreadable.
- Spread the chocolate frosting evenly over the fully cooled loaf.
- Slice and serve once the frosting is set.

- Make sure the sweet potato is fully cooled before mixing.
- Do not overmix the batter to keep the loaf tender.
- Allow the loaf to cool completely before frosting to prevent melting.
- Store in an airtight container for up to 3 days at room temperature.
