Description

A moist and tender sweet potato applesauce bread topped with a smooth, rich chocolate frosting. Naturally sweet, warmly flavored, and perfectly balanced between wholesome and indulgent.


Ingredients

  • 1 cup mashed sweet potato, smooth and cooled
  • 1/2 cup applesauce
  • 1 3/4 cups all purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup cocoa powder
  • 1 1/2 cups powdered sugar
  • 2 to 3 tablespoons milk, for frosting

Instructions

  1. Preheat oven to 350°F and grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together mashed sweet potato, applesauce, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
  3. In a separate bowl, combine all purpose flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top evenly.
  6. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the loaf to cool completely in the pan, then transfer to a rack.
  8. For the frosting, mix cocoa powder and powdered sugar with 2 to 3 tablespoons milk until smooth and spreadable.
  9. Spread the chocolate frosting evenly over the fully cooled loaf.
  10. Slice and serve once the frosting is set.

  • Make sure the sweet potato is fully cooled before mixing.
  • Do not overmix the batter to keep the loaf tender.
  • Allow the loaf to cool completely before frosting to prevent melting.
