Description

A comforting southern-style one-pan meal made with tender potatoes, smoky sausage, and green beans simmered in a savory buttery broth. Swamp Potatoes and Sausage is hearty, flavorful, and easy to make for any night of the week.


Ingredients

  • 1 pound smoked sausage, sliced into rounds
  • 4 medium potatoes, peeled and cubed
  • 2 cups green beans, trimmed
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 tablespoons butter
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 1 tablespoon of butter in a large skillet or Dutch oven over medium heat. Add the sliced sausage and cook for 4–5 minutes until browned. Remove and set aside.
  2. In the same pan, melt the remaining butter. Add the chopped onion and garlic and sauté until fragrant and soft.
  3. Add the potatoes, green beans, paprika, salt, and pepper. Stir to coat with butter and seasonings.
  4. Pour in the chicken broth, cover, and simmer for 15–20 minutes, stirring occasionally, until the potatoes are tender.
  5. Return the sausage to the pan and cook for 5 more minutes to blend the flavors.
  6. Sprinkle with fresh parsley and serve hot with cornbread or rice on the side.

Notes

  • Use andouille sausage for a Cajun kick.
  • Red or gold potatoes hold their shape best during cooking.
  • For a spicier version, add a pinch of cayenne or hot sauce.
  • Make it vegetarian by using plant-based sausage and vegetable broth.
