- 1 pound smoked sausage, sliced into rounds
- 4 medium potatoes, peeled and cubed
- 2 cups green beans, trimmed
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 tablespoons butter
- 1 cup chicken broth
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Heat 1 tablespoon of butter in a large skillet or Dutch oven over medium heat. Add the sliced sausage and cook for 4–5 minutes until browned. Remove and set aside.
- In the same pan, melt the remaining butter. Add the chopped onion and garlic and sauté until fragrant and soft.
- Add the potatoes, green beans, paprika, salt, and pepper. Stir to coat with butter and seasonings.
- Pour in the chicken broth, cover, and simmer for 15–20 minutes, stirring occasionally, until the potatoes are tender.
- Return the sausage to the pan and cook for 5 more minutes to blend the flavors.
- Sprinkle with fresh parsley and serve hot with cornbread or rice on the side.

- Use andouille sausage for a Cajun kick.
- Red or gold potatoes hold their shape best during cooking.
- For a spicier version, add a pinch of cayenne or hot sauce.
