- 4 cod filets (approx. 2 lbs)
- 1 lb cherry tomatoes
- 1 cup Kalamata olives, pitted
- 1 medium red onion, thinly sliced
- 4 garlic cloves, minced
- 2 cups fresh spinach, roughly chopped
- 2 oz feta cheese, crumbled
- 1/2 lemon, sliced
- 1/2 cup white wine
- 1 tsp oregano
- 1 tsp salt
- 6 tablespoons olive oil
- Zest of 1 lemon
- Black pepper, to taste
- Dill for garnish
Instructions
- Preheat oven to 400°F and lightly grease a baking dish with olive oil.
- In a bowl, toss cherry tomatoes, olives, red onion, garlic, olive oil, oregano, salt, and black pepper.
- Arrange cod filets in the baking dish and surround with the vegetable-olive mixture.
- Drizzle white wine over the fish and vegetables. Top with lemon slices and lemon zest.
- Bake for 12–15 minutes until cod is opaque and flakes easily with a fork.
- During the last 2–3 minutes, add fresh spinach to wilt slightly and sprinkle crumbled feta over the top.
- Garnish with fresh dill and serve immediately.
