Super Easy Monterey Chicken is a quick and delicious dinner featuring tender chicken breasts topped with melted Monterey Jack cheese, crispy bacon, fresh tomato, and green onions. Simple to make and full of flavor, perfect for a weeknight meal.

- 4 small boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 2 tablespoons barbecue sauce
- 2 cups grated Monterey Jack cheese
- 2 slices bacon, cooked and crumbled
- 1 small tomato, diced
- 1 green onion, sliced thin
Instructions
- Preheat oven to 375°F (190°C).
- Rub chicken breasts with olive oil, salt, pepper, onion powder, and garlic powder.
- Place chicken in a baking dish and bake for 20–25 minutes, or until cooked through.
- Remove from oven and brush with barbecue sauce.
- Top each chicken breast with grated Monterey Jack cheese and crumbled bacon.
- Return to oven and bake an additional 5 minutes, or until cheese is melted and bubbly.
- Remove from oven and garnish with diced tomato and sliced green onion.
- Serve warm with your choice of side dishes.
Notes
- Use thin chicken breasts for quicker cooking or pound thicker ones to even thickness.
- Feel free to substitute cheddar or pepper jack cheese for a different flavor.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
