Description

Super Easy Monterey Chicken is a quick and delicious dinner featuring tender chicken breasts topped with melted Monterey Jack cheese, crispy bacon, fresh tomato, and green onions. Simple to make and full of flavor, perfect for a weeknight meal.


Ingredients

  • 4 small boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 2 tablespoons barbecue sauce
  • 2 cups grated Monterey Jack cheese
  • 2 slices bacon, cooked and crumbled
  • 1 small tomato, diced
  • 1 green onion, sliced thin

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Rub chicken breasts with olive oil, salt, pepper, onion powder, and garlic powder.
  3. Place chicken in a baking dish and bake for 20–25 minutes, or until cooked through.
  4. Remove from oven and brush with barbecue sauce.
  5. Top each chicken breast with grated Monterey Jack cheese and crumbled bacon.
  6. Return to oven and bake an additional 5 minutes, or until cheese is melted and bubbly.
  7. Remove from oven and garnish with diced tomato and sliced green onion.
  8. Serve warm with your choice of side dishes.

Notes

  • Use thin chicken breasts for quicker cooking or pound thicker ones to even thickness.
  • Feel free to substitute cheddar or pepper jack cheese for a different flavor.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
