- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup melted butter
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
- 2 ripe peaches, sliced
Instructions
- Preheat your oven to 325ยฐF (165ยฐC). Grease a 9-inch springform pan and line the bottom with parchment paper.
- In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture is well combined and resembles wet sand.
- Press the crumb mixture into the bottom of the prepared pan to form a firm, even crust. Bake for 8โ10 minutes, then remove from the oven and set aside to cool.
- In a large bowl, beat the softened cream cheese with 1 cup of sugar and vanilla extract until smooth and creamy.
- Add the eggs, one at a time, beating well after each addition. Stir in the sour cream until fully combined.
- Pour the cream cheese filling over the cooled graham cracker crust, smoothing it out evenly.
- Bake for 45โ50 minutes, or until the center is just set and slightly jiggly when shaken.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour. Then transfer to the fridge and chill for at least 4 hours, or preferably overnight.
- Before serving, top the cheesecake with fresh mixed berries and peach slices. Slice and enjoy!
Notes
- This cheesecake can be made a day in advance to allow the flavors to fully develop.
- If you prefer a smoother topping, you can gently warm the berries and peaches before adding them to the cheesecake.
- For a more indulgent touch, drizzle honey or a berry compote over the top before serving.
