Description

This Summer Berry and Peach Cheesecake is a creamy, decadent dessert with a buttery graham cracker crust, velvety cream cheese filling, and topped with fresh berries and juicy peaches. Itโ€™s the perfect treat to highlight the flavors of summer.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
  • 2 ripe peaches, sliced

Instructions

  1. Preheat your oven to 325ยฐF (165ยฐC). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture is well combined and resembles wet sand.
  3. Press the crumb mixture into the bottom of the prepared pan to form a firm, even crust. Bake for 8โ€“10 minutes, then remove from the oven and set aside to cool.
  4. In a large bowl, beat the softened cream cheese with 1 cup of sugar and vanilla extract until smooth and creamy.
  5. Add the eggs, one at a time, beating well after each addition. Stir in the sour cream until fully combined.
  6. Pour the cream cheese filling over the cooled graham cracker crust, smoothing it out evenly.
  7. Bake for 45โ€“50 minutes, or until the center is just set and slightly jiggly when shaken.
  8. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour. Then transfer to the fridge and chill for at least 4 hours, or preferably overnight.
  9. Before serving, top the cheesecake with fresh mixed berries and peach slices. Slice and enjoy!

Notes

  • This cheesecake can be made a day in advance to allow the flavors to fully develop.
  • If you prefer a smoother topping, you can gently warm the berries and peaches before adding them to the cheesecake.
