- 1 package (16.5 oz) refrigerated sugar cookie dough
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1/2 cup sour cream
- Whipped cream, for topping (optional)
- Sprinkles, for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9-inch springform pan.
- Press the sugar cookie dough evenly into the bottom of the pan to form the crust. Bake for 10–12 minutes until lightly golden. Remove from oven and let cool slightly.
- In a large bowl, beat cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla and sour cream until fully combined.
- Pour cheesecake filling over the cooled cookie crust. Smooth the top with a spatula.
- Bake for 40–45 minutes, or until the center is set but slightly jiggly. Turn off oven, crack the door, and let cheesecake cool for 1 hour.
- Refrigerate at least 4 hours or overnight before serving.
- Top with whipped cream and sprinkles if desired before serving.
