  • 2 large chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese (or Greek yogurt for a lighter option)
  • 1/4 cup shredded mozzarella or feta cheese
  • 2 cloves garlic, minced
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare the filling: In a bowl, mix spinach, cream cheese, mozzarella (or feta), and garlic.
  3. Slice the chicken: Cut a pocket into each chicken breast, being careful not to slice through.
  4. Stuff the chicken: Fill each pocket with the spinach-cheese mixture and secure with toothpicks.
  5. Season the outside of the chicken with paprika, black pepper, salt, and onion powder.
  6. Sear the chicken: Heat olive oil in a pan over medium heat and sear chicken for 2 minutes per side.
