- 1 1/2 English cucumbers, halved and sliced (about 3 cups)
- 2 cups rotisserie chicken, chopped
- 1/4 cup cilantro, minced
- 3 green onions, sliced
- 1 jalapeno, seeded and diced
- 1/4 red onion, diced
- 1/2 red bell pepper, seeded and diced
- 15.25 oz can sweet corn, drained
- Dressing:
- 1/2 cup plain Greek yogurt (2% or higher)
- 1/3 cup mayonnaise
- Juice and zest of 1 lime
- 1 clove garlic, finely minced or grated
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon freshly cracked black pepper
Instructions
- In a large bowl, combine sliced cucumbers, rotisserie chicken, cilantro, green onions, jalapeno, red onion, red bell pepper, and drained corn.
- In a separate small bowl, whisk together Greek yogurt, mayonnaise, lime juice and zest, garlic, chili powder, paprika, cumin, salt, and pepper until smooth.
- Pour the dressing over the cucumber and chicken mixture and toss gently to coat all ingredients evenly.
- Chill the salad in the refrigerator for at least 15–20 minutes before serving to allow flavors to meld.
- Serve cold as a refreshing side or light main dish.
Notes
- Adjust the jalapeno for desired heat level.
- Use fresh corn if available for extra sweetness and texture.
- This salad can be prepared ahead and stored in the refrigerator for up to 2 days.
