Description

A fresh and zesty Street Corn Creamy Cucumber Salad featuring crunchy cucumbers, sweet corn, rotisserie chicken, and a tangy creamy dressing. Perfect for a light lunch or summer side dish.


Ingredients

  • 1 1/2 English cucumbers, halved and sliced (about 3 cups)
  • 2 cups rotisserie chicken, chopped
  • 1/4 cup cilantro, minced
  • 3 green onions, sliced
  • 1 jalapeno, seeded and diced
  • 1/4 red onion, diced
  • 1/2 red bell pepper, seeded and diced
  • 15.25 oz can sweet corn, drained
  • Dressing:
  • 1/2 cup plain Greek yogurt (2% or higher)
  • 1/3 cup mayonnaise
  • Juice and zest of 1 lime
  • 1 clove garlic, finely minced or grated
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly cracked black pepper

Instructions

  1. In a large bowl, combine sliced cucumbers, rotisserie chicken, cilantro, green onions, jalapeno, red onion, red bell pepper, and drained corn.
  2. In a separate small bowl, whisk together Greek yogurt, mayonnaise, lime juice and zest, garlic, chili powder, paprika, cumin, salt, and pepper until smooth.
  3. Pour the dressing over the cucumber and chicken mixture and toss gently to coat all ingredients evenly.
  4. Chill the salad in the refrigerator for at least 15–20 minutes before serving to allow flavors to meld.
  5. Serve cold as a refreshing side or light main dish.

Notes

  • Adjust the jalapeno for desired heat level.
  • Use fresh corn if available for extra sweetness and texture.
