- 2 cups fresh strawberries (or frozen, thawed)
- 3/4 cup granulated cane sugar
- 1 cup + 1/4 cup water (divided)
- 1 tsp matcha powder
- 1/2 cup milk of choice

Make the Strawberry Syrup:
- Trim stems off strawberries and slice them in half.
- Add strawberries, 1 cup water, and sugar to a saucepan over medium-high heat.
- Bring to a boil, then simmer for 8-10 minutes.
- Let cool for 5-10 minutes, then strain or blend until smooth.
- Store in a glass container in the fridge (up to 2 weeks if strained, 1 week if blended).

Assemble the Drink:
- Add ¼ cup strawberry syrup to the bottom of a large glass.
- Fill the glass with ice and pour in the milk.

Prepare the Matcha:
- Sift matcha powder into a mug or bowl to remove lumps.
- Add ¼ cup hot water and whisk briskly using a matcha whisk until frothy.

Combine & Serve:
- Pour the frothed matcha over the milk.
- Stir with a straw, mix well, and enjoy!

- Adjust the sweetness by adding more or less strawberry syrup.
