Description

Strawberry Linzer Cookies are delicate, buttery sandwich cookies filled with sweet strawberry jam and dusted with icing sugar or drizzled with a lemon glaze. These cookies are perfect for gifting or enjoying with tea.


Ingredients

  • For the Dough:
  • 1/2 cup whole almonds (or 3/4 cup almond flour)
  • 170 g butter, at room temperature (12 tbsps)
  • 1/2 cup caster sugar (90 g)
  • 1 egg yolk, at room temperature
  • 1 tsp vanilla extract
  • Zest of 1 lemon (optional)
  • 1 1/3 cups all-purpose flour (160 g)
  • 1/4 tsp salt (if using unsalted butter)
  • For the Filling and Topping:
  • 1/2 cup strawberry jam (or other jam)
  • 1/3 cup sifted icing sugar + 1 tbsp lemon juice (for lemon glaze)
  • 1/4 cup icing sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Grind the almonds finely if using whole almonds.
  3. In a large bowl, cream butter and caster sugar until light and fluffy. Add egg yolk, vanilla extract, and lemon zest, mixing until combined.
  4. Fold in the ground almonds, flour, and salt until a smooth dough forms. Wrap in plastic wrap and chill for 30 minutes.
  5. Roll out the dough to 1/4 inch thickness on a lightly floured surface. Cut into desired shapes. For half the cookies, cut a small hole in the center to show the jam.
  6. Place cookies on the prepared baking sheet and bake for 10–12 minutes until edges are lightly golden. Cool completely on a wire rack.
  7. Spread strawberry jam on the bottom side of solid cookies. Top with cookies with cut-out centers.
  8. Dust with icing sugar or drizzle with lemon glaze (icing sugar + lemon juice) on top.
  9. Serve or store in an airtight container.

Notes

  • Ensure the egg yolk is at room temperature to prevent the dough from curdling.
  • You can substitute almond flour if you don’t have whole almonds.
  • Cookies keep well for up to 5 days in an airtight container.
