Strawberry Linzer Cookies are delicate, buttery sandwich cookies filled with sweet strawberry jam and dusted with icing sugar or drizzled with a lemon glaze. These cookies are perfect for gifting or enjoying with tea.

- For the Dough:
- 1/2 cup whole almonds (or 3/4 cup almond flour)
- 170 g butter, at room temperature (12 tbsps)
- 1/2 cup caster sugar (90 g)
- 1 egg yolk, at room temperature
- 1 tsp vanilla extract
- Zest of 1 lemon (optional)
- 1 1/3 cups all-purpose flour (160 g)
- 1/4 tsp salt (if using unsalted butter)
- For the Filling and Topping:
- 1/2 cup strawberry jam (or other jam)
- 1/3 cup sifted icing sugar + 1 tbsp lemon juice (for lemon glaze)
- 1/4 cup icing sugar (for dusting)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Grind the almonds finely if using whole almonds.
- In a large bowl, cream butter and caster sugar until light and fluffy. Add egg yolk, vanilla extract, and lemon zest, mixing until combined.
- Fold in the ground almonds, flour, and salt until a smooth dough forms. Wrap in plastic wrap and chill for 30 minutes.
- Roll out the dough to 1/4 inch thickness on a lightly floured surface. Cut into desired shapes. For half the cookies, cut a small hole in the center to show the jam.
- Place cookies on the prepared baking sheet and bake for 10–12 minutes until edges are lightly golden. Cool completely on a wire rack.
- Spread strawberry jam on the bottom side of solid cookies. Top with cookies with cut-out centers.
- Dust with icing sugar or drizzle with lemon glaze (icing sugar + lemon juice) on top.
- Serve or store in an airtight container.
Notes
- Ensure the egg yolk is at room temperature to prevent the dough from curdling.
- You can substitute almond flour if you don’t have whole almonds.
- Cookies keep well for up to 5 days in an airtight container.
