Description

These Strawberry Lemon Blondies are soft, chewy, and bursting with fresh, fruity flavors! The combination of juicy strawberries and zesty lemon creates a refreshing, slightly tangy treat, perfect for spring and summer. A simple lemon glaze takes them to the next level!

Ingredients

Units Scale

For the Blondies:

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup fresh strawberries, chopped
  • 1/4 cup lemon juice
  • Zest of 1 lemon

For the Glaze (Optional, but recommended):

  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Instructions

  • Preheat & Prep:
    • Preheat oven to 350ยฐF (175ยฐC).
    • Grease and line an 8ร—8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  • Make the Batter:
    • In a large bowl, whisk together the melted butter and granulated sugar until well combined.
    • Beat in the eggs one at a time, then stir in the vanilla extract.
    • In a separate bowl, whisk together the flour and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
    • Gently fold in the chopped strawberries, lemon juice, and lemon zest.
  • Bake the Blondies:
    • Pour the batter into the prepared pan and spread evenly.
    • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs (not wet batter). Be careful not to overbake.
    • Let the blondies cool completely in the pan before cutting into squares.
  • Make the Glaze (Optional):
    • Whisk together the powdered sugar and lemon juice until smooth.
    • Drizzle the glaze over the cooled blondies.

Notes

  • For a more intense lemon flavor, add extra lemon zest to the batter.
  • You can use frozen strawberries if fresh ones arenโ€™t availableโ€”just thaw and drain them before chopping.
  • A light dusting of powdered sugar can add an elegant finishing touch.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
