Description

This Strawberry Chicken Salad is fresh, light, and bursting with sweet and savory flavors. Juicy strawberries, tender chicken, tangy goat cheese, and crunchy almonds come together with a homemade strawberry balsamic dressing. Perfect for a healthy lunch, summer dinner, or meal prep!


Ingredients

For the Salad:

  • 2 cups cooked chicken, chopped

  • 4 cups chopped romaine lettuce

  • 2 cups chopped strawberries

  • 1/2 cup dried cranberries

  • 1/4 cup sliced red onion

  • 1/4 cup crumbled goat cheese

  • 1/4 cup sliced almonds

For the Strawberry Balsamic Dressing:

  • 1 cup strawberries

  • 1/4 cup balsamic vinegar

  • 1/4 cup extra-virgin olive oil

  • 1 tbsp Dijon mustard

  • 1 clove garlic, minced

  • 1/4 tsp salt

  • 1/4 tsp pepper


Instructions

Make the Dressing:

  1. In a food processor or blender, combine strawberries, balsamic vinegar, olive oil, Dijon mustard, garlic, salt, and pepper.

  2. Blend until smooth and set aside.

Assemble the Salad:

  1. In a large bowl, toss together chicken, romaine lettuce, strawberries, cranberries, red onion, goat cheese, and almonds.

  2. Drizzle the strawberry balsamic dressing over the salad and toss to coat evenly.
