Ingredients

1 lb beef sirloin, thinly sliced

1 lb Chinese yam, peeled and sliced into thin strips

2 cloves garlic, minced

1 tbsp soy sauce

1 tbsp oyster sauce

1 tsp cornstarch

1/2 tsp sugar

1/4 tsp black pepper

2 tbsp vegetable oil

2 tbsp chopped green onions (for garnish)
Instructions

Marinate the Beef:

In a bowl, mix beef, soy sauce, oyster sauce, cornstarch, sugar, and black pepper.

Let it marinate for at least 15 minutes.

Blanch the Yam:

Bring a pot of water to a boil.

Add yam slices and blanch for 2-3 minutes until slightly softened.

Drain and set aside.

Stir-Fry:

Heat vegetable oil in a wok or skillet over high heat.
