- 4 ounces cream cheese, softened
- 1 large egg
- 1 tablespoon olive oil
- 1/2 teaspoon dried dill
- 2 cups fresh spinach, chopped and packed
- 3/4 cup crumbled feta
- 2 teaspoons bacon bits
- Salt and pepper, to taste
- 1 sheet frozen puff pastry, thawed
- 1 tablespoon butter, melted
Instructions
- Preheat the oven to 400ยฐF (200ยฐC).
- Spray 9 cups of a muffin pan with cooking spray.
- Microwave the cream cheese in 10-second intervals until soft and melted, but not steaming. Add the egg, olive oil, and dill to the cream cheese and mix until well combined.
- In a separate bowl, combine the spinach, feta, and bacon. Pour the cream cheese mixture on top and season with salt and pepper. Mix well with a fork.
- Cut the pastry sheet into 9 squares. Line the muffin pan with the squares of puff pastry, stretching them slightly to fit. Press them into the bottom of the muffin cups.
- Evenly divide the spinach mixture among the cups. Fold the 4 points of the pastry square together to cover the filling, pressing the points together to seal.
- Lightly brush the tops with melted butter.
- Bake for 20 minutes or until golden and puffy.
- Allow to cool for 10 minutes. Use a knife around the edges to loosen and pop them out of the muffin pan.
- Serve warm and enjoy!
Notes
- You can make these ahead of time and store them in the fridge. Just reheat them in the oven for about 5 minutes before serving.
