Description

These Spinach Garlic Meatballs are a delicious and healthy twist on the classic meatball. Ingredients

  • 1 lb ground turkey or chicken (or lean beef)
  • 2 cups fresh spinach (chopped)
  • 3 garlic cloves (minced)
  • 1/2 cup breadcrumbs (whole wheat or regular)
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil (for frying)

Instructions

  • In a large bowl, combine the ground meat, chopped spinach, garlic, breadcrumbs, Parmesan cheese, egg, oregano, basil, salt, and pepper.
  • Mix everything together until well combined. You can use your hands for the best results.
  • Shape the mixture into meatballs, about 1.5 inches in diameter.
  • Heat olive oil in a large skillet over medium heat.
  • Once the oil is hot, add the meatballs to the skillet and cook for 6-8 minutes, turning occasionally, until golden brown on all sides and cooked through.
  • Remove from the skillet and serve hot with your favorite sauce or side.

Notes

  • For a gluten-free version, use gluten-free breadcrumbs or almond flour.
  • These meatballs can also be baked in the oven at 375ยฐF (190ยฐC) for 20-25 minutes instead of frying.
