Description

A delicious quesadilla inspired by the flavors of spanakopita, featuring spinach, feta, fresh herbs, and melted cheese for a savory, crispy treat.


Ingredients

  • 1/2 cup packed spinach, steamed, squeezed, drained, and chopped
  • 1 tablespoon mixed herbs (mint, dill, and parsley), chopped
  • 1 green onion, sliced
  • 2 tablespoons feta cheese, crumbled
  • 2 (8-inch) tortillas
  • 1 cup kasseri cheese (or mozzarella), shredded

Instructions

  • Mix the spinach, herbs, green onions, and feta cheese in a bowl.
  • Heat a pan over medium heat, place a tortilla in the pan, and sprinkle half of the cheese on it.
  • Add the spinach mixture on top, followed by the remaining cheese, and then cover with the second tortilla.
  • Cook until golden brown on both sides and the cheese is melted, about 2-4 minutes per side.
  • To flip, place a plate on the quesadilla in the pan, flip it over onto the plate, and then slide it back into the pan.

Notes

  • Option: Add a side of tzatziki for dipping to enhance the Greek flavors.
  • Tip: If you prefer a crispier quesadilla, lightly butter the tortillas before cooking.
