- 1/2 cup packed spinach, steamed, squeezed, drained, and chopped
- 1 tablespoon mixed herbs (mint, dill, and parsley), chopped
- 1 green onion, sliced
- 2 tablespoons feta cheese, crumbled
- 2 (8-inch) tortillas
- 1 cup kasseri cheese (or mozzarella), shredded
Instructions
- Mix the spinach, herbs, green onions, and feta cheese in a bowl.
- Heat a pan over medium heat, place a tortilla in the pan, and sprinkle half of the cheese on it.
- Add the spinach mixture on top, followed by the remaining cheese, and then cover with the second tortilla.
- Cook until golden brown on both sides and the cheese is melted, about 2-4 minutes per side.
- To flip, place a plate on the quesadilla in the pan, flip it over onto the plate, and then slide it back into the pan.
Notes
- Option: Add a side of tzatziki for dipping to enhance the Greek flavors.
- Tip: If you prefer a crispier quesadilla, lightly butter the tortillas before cooking.
