- 2 shallots, sliced
- 5 oz fresh spinach
- 6 eggs
- 3/4 tsp kosher salt
- 1/2 tsp oregano
- 1/2 tsp garlic powder
- 1/2 cup fat-free feta cheese
Instructions
- Preheat oven to 350ยฐF.
- Sautรฉ the vegetables: Spray a frying pan with olive oil spray. Add shallots and cook for about 5 minutes until tender. Add spinach, cover with a lid, and allow to wilt.
- Prepare the baking dish: Spray a 2.5 qt baking dish with nonstick cooking spray. Spread the spinach and shallot mixture evenly on the bottom.
- Mix the eggs: In a bowl, whisk together eggs, salt, oregano, and garlic powder.
- Assemble the omelet: Pour the egg mixture over the spinach mixture and sprinkle with feta cheese.
- Bake: Place in the preheated oven and bake for 30 minutes, or until the eggs are fully set.

Notes
