Description

These Easy Spinach Feta Baked Omelets are a healthy, high-protein breakfast packed with Mediterranean flavors. Fresh spinach, shallots, eggs, and creamy feta cheese come together with a hint of oregano and garlic for a deliciously satisfying meal. Perfect for meal prep, these oven-baked omelets can be served on their own, in a wrap, or on an English muffin for a quick breakfast.


Ingredients

  • 2 shallots, sliced
  • 5 oz fresh spinach
  • 6 eggs
  • 3/4 tsp kosher salt
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 cup fat-free feta cheese

Instructions

  • Preheat oven to 350ยฐF.
  • Sautรฉ the vegetables: Spray a frying pan with olive oil spray. Add shallots and cook for about 5 minutes until tender. Add spinach, cover with a lid, and allow to wilt.
  • Prepare the baking dish: Spray a 2.5 qt baking dish with nonstick cooking spray. Spread the spinach and shallot mixture evenly on the bottom.
  • Mix the eggs: In a bowl, whisk together eggs, salt, oregano, and garlic powder.
  • Assemble the omelet: Pour the egg mixture over the spinach mixture and sprinkle with feta cheese.
  • Bake: Place in the preheated oven and bake for 30 minutes, or until the eggs are fully set.
  • Serve & enjoy! Enjoy as-is, in a wrap, or on an English muffin.

Notes

  • These omelets can be made ahead and stored in the fridge for up to 4 days. Simply reheat before serving.
