Description

Spinach Cottage Cheese Flagels are a savory, protein-rich twist on the classic flat bagel. These chewy, golden flagels are loaded with sautéed spinach, creamy cottage cheese, and a hint of garlic—perfect for breakfast sandwiches or healthy on-the-go snacks.

Ingredients

Units Scale
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup cottage cheese
  • 1 cup cooked spinach, well-drained and chopped
  • 1 garlic clove, minced
  • 1 egg (for egg wash)
  • 1 tbsp sesame seeds or everything bagel seasoning (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet, sauté the minced garlic and spinach until fragrant and all moisture is cooked off. Let it cool.
  3. In a mixing bowl, combine flour, baking powder, and salt. Stir in the cottage cheese and cooled spinach mixture.
  4. Mix until a dough forms. Divide into 4–6 equal portions and shape each into a flattened bagel (flagel) shape with a hole in the center.
  5. Place flagels on the prepared baking sheet. Brush with beaten egg and sprinkle with sesame seeds or seasoning if desired.
  6. Bake for 20–25 minutes or until golden brown and cooked through.
  7. Let cool slightly before serving. Best enjoyed warm or toasted.

Notes

  • Ensure spinach is well-drained to avoid soggy dough.
  • Use whole wheat flour for added fiber and nutrients.
  • Great served with avocado, eggs, or smoked salmon.
