Ingredients

  • 8 oz linguine

  • 1/3 cup sun-dried tomatoes, chopped

  • 3 cloves garlic, minced

  • 1 cup half-and-half

  • 1 cup Parmesan cheese, shredded

  • 1/4 teaspoon paprika

  • 1/4 teaspoon salt

  • 6 oz spinach

  • 5 fresh basil leaves, finely chopped


Instructions

  • Cook linguine according to package instructions. Drain and set aside.

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.

  • Add chopped sun-dried tomatoes and garlic. Sauté for about 30 seconds, stirring constantly.

  • Pour in the half-and-half, add paprika and salt. Bring to a gentle boil, then reduce to a simmer.

  • Stir in half of the Parmesan cheese (½ cup). Continue stirring until melted and the sauce begins to thicken. If needed, add more cheese to thicken or a splash of half-and-half to thin.

  • Add spinach and cook, stirring, until wilted (about 1 minute).

  • Add the drained linguine and toss well to combine with the sauce.

 

  • Adjust salt to taste and garnish with chopped basil before serving.


Notes

  • This pasta is great on its own or with grilled chicken, shrimp, or salmon for added protein.

  • Substitute half-and-half with heavy cream for a richer sauce, or use a plant-based alternative for a dairy-free version.
