Description

This spinach and feta stuffed salmon is a flavorful, high-protein meal thatโ€™s easy to prepare yet perfect for fine dining at home. The combination of tender salmon, creamy feta, and sautรฉed spinach makes for an irresistible dish. Serve it with a side of rice, roasted vegetables, or a fresh salad for a complete meal.


Ingredients

  • 4 salmon fillets
  • 2 tbsp olive oil (divided)
  • Salt and pepper, to taste
  • 3 scallions, chopped
  • 1 clove garlic, minced
  • 4 oz baby spinach
  • 1 tbsp fresh dill, chopped
  • 3/4 cup feta cheese, crumbled

  • 1/2 tsp paprika

Instructions

  • Let the salmon rest at room temperature for 30 minutes before cooking.
  • Preheat oven to 420ยฐF and line a baking tray with parchment paper.
  • Pat the salmon dry and cut a deep slit into the thickest part of each fillet, being careful not to cut through.
  • In a skillet, heat 1 tbsp olive oil over medium-high heat. Sautรฉ scallions for 1-2 minutes, then add garlic for 15 seconds.
  • Stir in the spinach and dill, seasoning with salt and pepper. Sautรฉ until mostly wilted, then transfer to a bowl. Let cool for 5 minutes before mixing in the crumbled feta.
  • Stuff each salmon fillet with the spinach-feta mixture and set them upright on the baking sheet.
  • Brush salmon with remaining olive oil, season with salt and pepper, and sprinkle paprika on top for color.
  • Bake for 17 minutes or until the salmon is cooked through.
