Description

Transform cottage cheese into a creamy, protein-packed dip with just five ingredients and five minutes! This spicy, savory dip is perfect for parties and pairs wonderfully with tortilla chips, pita chips, or veggies. A crowd-pleaser that even cottage cheese skeptics will love!


Ingredients

  • 2 scallions (spring onions), chopped

  • Handful of garlic chives

  • 1.5 cups/300g cottage cheese

  • 1/4 cup pickled jalapeรฑos

  • 1/4 cup sundried tomatoes

  • 1/2 teaspoon salt

  • 1 tablespoon olive oil (or use chili oil or ginger scallion oil for extra flavor)


Instructions

  • Prepare your topping:
    Set aside one of the scallions and half the garlic chives (if using), and chop them finely. These will be used to top the dip when serving.

  • Blitz the dip:
    Add the cottage cheese, pickled jalapeรฑos, sundried tomatoes, salt, and the remaining scallions and garlic chives to a food processor or blender. Blitz until smooth and creamy, scraping down the sides as needed. This should only take a few minutes. Taste and add more salt if desired.

  • Garnish and serve:
    Spoon the dip into a serving plate or small bowl. Smooth the top with the back of a spoon and create a well in the center. Drizzle with olive oil (or chili oil or ginger scallion sauce) and top with the reserved chopped scallions and garlic chives. Serve with your favorite chips, crackers, or cruditรฉs.


Notes

  • Ingredient notes: You can use regular, low-fat, or zero-fat cottage cheese depending on your preference. Feel free to swap the garlic chives for herbs like basil, parsley, mint, or cilantro. If you want a simpler version, omit the scallions and garlic chives, and just use the pickled jalapeรฑos and sundried tomatoes โ€“ itโ€™s still delicious!

  • Storage instructions: This dip keeps for about 5 days in the fridge. However, itโ€™s so tasty, youโ€™ll likely finish it quicker than that! I donโ€™t recommend freezing cottage cheese, as it can change the texture and make it grainy.
