Description

This Spicy Sausage Pasta is packed with bold flavors from fresh chorizo, crispy bacon, and Parmesan cheese, all tossed with tender tagliatelle. A quick and easy dinner perfect for busy nights!


Ingredients

Scale
  • 2/3 lb fresh chorizo sausage
  • 5 oz bacon (chopped)
  • 2 cloves garlic (finely chopped)
  • 2 big handfuls fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 3/4 lb fresh tagliatelle (cooked according to package instructions)
  • 1 cup pasta cooking water
  • 1 tbsp butter (optional, use if needed)

Instructions

  • Prepare the Sausage:
    Remove the skin from the chorizo sausage by making a cut and peeling it off. Roughly chop the sausage.
  • Cook the Bacon:
    Place chopped bacon in a cold frying pan and heat over medium-high. Cook until the bacon is crispy and has released fat. If needed, add butter.
  • Add Sausage & Garlic:
    Add the chopped sausage and garlic to the pan. Cook, stirring often, until the sausage is fully cooked, breaking it apart as it cooks.
  • Wilt the Spinach:
    Stir in the spinach and cook until wilted.
  • Deglaze the Pan:
    Pour in ยฝ cup of pasta cooking water and stir well to deglaze the pan, scraping up any bits stuck to the bottom.
  • Combine Everything:
    Add the cooked tagliatelle and another ยฝ cup of pasta water. Mix well, adding more water if needed to create a light sauce.
  • Finish & Serve:
    Stir in grated Parmesan cheese and mix well. Serve immediately!

Notes

  • Swap chorizo for Italian sausage for a milder version.
  • Use linguine or fettuccine if tagliatelle isnโ€™t available.
  • For extra heat, sprinkle red pepper flakes before serving.
