- 4 boneless, skinless chicken breasts or thighs
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- Zest and juice of 2 limes
- 2 garlic cloves, minced
- 1 teaspoon chili flakes (or to taste)
- 1/2 teaspoon ground cumin
- Salt and pepper, to taste
- Fresh chopped cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a mixing bowl, whisk together honey, soy sauce, olive oil, lime zest and juice, garlic, chili flakes, cumin, salt, and pepper.
- Place the chicken in a zip-top bag or shallow dish and pour the marinade over. Seal and refrigerate for at least 30 minutes or up to 4 hours.
- Preheat a grill or grill pan over medium-high heat. Lightly oil the grates.
- Remove the chicken from the marinade and grill for 6–7 minutes per side, or until fully cooked and nicely charred.
- Let rest for 5 minutes. Garnish with chopped cilantro and serve with lime wedges.
Notes
- Reserve some marinade (before adding raw chicken) for a glaze or dipping sauce.
- Thighs will stay juicier than breasts—use your preferred cut.
- Add extra chili flakes or hot sauce if you like more heat.
- Pairs well with rice, quinoa, or a fresh slaw.
