- For the Sandwiches:
- 1 cup cheddar and Monterey Jack cheese, shredded
- 4 large eggs, beaten
- 1/4 cup milk
- 1/4 cup red bell pepper, diced
- 1/4 cup green bell pepper, diced
- 1 tablespoon cilantro, roughly chopped
- 1 tablespoon green onion, thinly sliced
- Fresh ground black pepper
- 8 raw bacon strips
- 4 English muffins, cut in half
- For the Chipotle Sauce:
- 1 chipotle in adobo, most seeds removed (can slowly add back in until you reach desired spicy level)
- 1/4 teaspoon chipotle in adobo sauce
- 2 cups plain yogurt
- 2 tablespoons cilantro
- 2 cloves garlic
Instructions
- For the Chipotle Sauce: In a blender, combine the chipotle in adobo, chipotle sauce, yogurt, cilantro, and garlic. Blend until smooth. Taste and adjust the spice level by adding more chipotle if desired. Set aside.
- For the Sandwiches: In a medium bowl, whisk together eggs, milk, red bell pepper, green bell pepper, cilantro, green onion, and black pepper.
- Heat a large non-stick skillet over medium heat and lightly grease with cooking spray. Pour in the egg mixture and cook, stirring occasionally, until eggs are scrambled and cooked through.
- While the eggs are cooking, in a separate skillet, cook the bacon over medium heat until crispy. Remove from the skillet and set aside on paper towels to drain.
- Toast the English muffin halves until golden brown.
- Assemble the sandwiches: On the bottom half of each toasted muffin, layer a portion of the scrambled eggs, followed by a slice of bacon, and a generous spoonful of chipotle sauce. Top with the other muffin half.
- Serve immediately and enjoy!
Notes
- If you prefer a milder sauce, reduce the amount of chipotle or use a different type of chili pepper.
- For a lighter version, you can substitute turkey bacon or leave out the bacon entirely.
- Feel free to add other toppings such as avocado, tomato, or lettuce for extra flavor and texture.
