- 1 cup cheddar and Monterey Jack cheese, shredded
- 4 large eggs, beaten
- 1/4 cup milk
- 1/4 cup red bell pepper, diced
- 1/4 cup green bell pepper, diced
- 1 tablespoon cilantro, roughly chopped
- 1 tablespoon green onion, thinly sliced
- Fresh ground black pepper, to taste
- 8 strips bacon
- 4 English muffins, split
- 1 chipotle pepper in adobo sauce, seeds mostly removed
- 1/4 teaspoon chipotle adobo sauce
- 2 cups plain yogurt
- 2 tablespoons cilantro, finely chopped
- 2 cloves garlic, minced
Instructions
- Cook bacon in a skillet over medium heat until crispy; transfer to a paper towel-lined plate.
- In a bowl, whisk together the beaten eggs, milk, shredded cheese, diced red and green peppers, cilantro, green onion, and black pepper.
- Pour the egg mixture into a lightly greased skillet over low-medium heat. Cook gently, stirring occasionally, until soft and fluffy. Remove from heat.
- To make the chipotle yogurt sauce, blend the yogurt, chipotle pepper, chipotle sauce, cilantro, and garlic until smooth. Adjust spice level to taste.
- Toast the English muffins.
- Assemble the sandwiches: Spread chipotle yogurt sauce onto each English muffin, add a scoop of cheesy scrambled eggs, and top with two slices of bacon.
- Serve warm with extra sauce on the side.
Notes
- Replace bacon with turkey bacon to make the sandwich halal.
- Adjust chipotle peppers for more or less heat.
- For meal prep, prep eggs and sauce ahead and assemble fresh.
