Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and cook until softened, about 3 minutes.
  • Stir in minced garlic and grated ginger, cooking until fragrant, about 1 minute.
  • Add diced tomatoes and cook until softened, about 5 minutes.
  • Stir in cumin, paprika, cayenne, turmeric, salt, and pepper. Mix well.
  • Add chicken pieces and cook until browned on all sides.
  • Pour in coconut milk and chicken broth, then bring to a gentle simmer.
  • Reduce heat, cover, and let cook for 15-20 minutes until chicken is fully cooked and sauce thickens.
  • Stir in lime juice and adjust seasoning if needed.
